Strawberry Bruschetta


1 French Baguette, sliced
2 tbsp honey
2 tbsp balsamic vinegar
1/4 tsp vanilla extract
2 tbsp packed brown sugar
1 16oz container Ricotta cheese
1-2 lbs strawberries - sliced
Fresh basil - cut chiffonade style

1.) Mix vinegar, vanilla, and brown sugar until sugar has dissolved.

2.) Mix in sliced strawberries. Chill for 1 hour, mixing 1-2 times.

3.) Meanwhile, mix honey into Ricotta cheese.

4.) When the strawberries have finished, spread 1-2 tbsp of Ricotta mixture on each slice of bread.

5.)  Arrange strawberries on top of the Ricotta, then top with basil.

6.) Add strawberry juices, if desired.
